About Gilles & Jasper

After years of international experience in the hospitality industry, Gilles and Jasper embarked on their own adventure in Ghent with WhyNot.

Gilles Maupoux received his training at the renowned Vatel hotel school in Lyon, while Jasper Permentier hails from the Ter Duinen Hotel School in Koksijde. Jasper quickly delved into mixology, amassing over a decade of professional experience as a mixologist. Meanwhile, Gilles accumulated years of experience in the hospitality and event sector (including working with entities like Cirque du Soleil), and he never lost his passion for the culinary arts. They crossed paths in the Ghentian hospitality scene, sharing a common vision on customer experience and gastronomy in all its aspects.
