Gilles Maupoux is opgeleid aan de gerenommeerde hotelschool Vatel in Lyon, Jasper Permentier komt van Hotelschool Ter Duinen in Koksijde. Jasper stortte zich al snel op mixologie en is al ruim tien jaar professioneel mixologist. Gilles bouwde jarenlang ervaring op in de hospitality- en eventsector (o.a. Cirque du Soleil), en heeft zijn passie voor de keuken nooit verloren. Ze leerden elkaar kennen in de Gentse horeca en delen dezelfde visie op klantbeleving en gastronomie in al zijn facetten.
